​Preparation of tapioca

In Asia, Bubble Tea is traditionally made using tapioca pearls. Here's our recipe for preparing these tasty tapioca pearls.



  • Bring 8 cups of water to boil
  • Carefully add one cup of tapioca
  • Allow the tapioca to rise to the surface (about 2 minutes))
  • Cook over a low heat for 30 minutes, uncovered
  • Stir the tapioca several times during cooking to make sure nothing sticks
  • Remove from the heat, cover and leave to rest for 30 minutes
  • Place the tapioca in a colander and rinse with cold water
  • In a bowl, add the tapioca to a mixture of half water and half dissolved sugar

Cooked tapioca will last between 8 and 12 hours in its sugar, at room temperature.
