Preparation of tapioca
In Asia, Bubble Tea is traditionally made using tapioca pearls. Here's our recipe for preparing these tasty tapioca pearls.

- Bring 8 cups of water to boil
- Carefully add one cup of tapioca
- Allow the tapioca to rise to the surface (about 2 minutes))
- Cook over a low heat for 30 minutes, uncovered
- Stir the tapioca several times during cooking to make sure nothing sticks
- Remove from the heat, cover and leave to rest for 30 minutes
- Place the tapioca in a colander and rinse with cold water
- In a bowl, add the tapioca to a mixture of half water and half dissolved sugar
Cooked tapioca will last between 8 and 12 hours in its sugar, at room temperature.
